INTRODUCTION :- Dal khichdi is a lovely wholesome one plate meal which is tasty easy to digest and healthy. people of all age group can have this simple and tasty dish for breakfast lunch as well as dinner. This one pot wonder combines rice, lentils, and an array of aromatic spices, creating a harmonious blend of flavors, and textures that have captivated taste buds for generations. Its humble yet nourishing nature make it staples in households in India, often served with ghee and yogurt (Dahi ) rayta. Whether enjoyed in rainy days or during times of illness. Dal khichdi represents the essence of Indian cuisine .offering both substance and solace in a single bowl. Its simplicity versatility and timeless appeal have secured its place as a delicious gem in the rich design of Indian culinary science.

INGREDICENTS :- 1. rice one cup 2. One medium sized onion 3. Two tsp red lentils 4. 2 tsp yellow lentils 5. One tsp pigeon peas (optional ) 6. Turmeric powder 1/4 tsp 7. Fresh ginger- garlic paste 1tsp 8. One tomato 9. One cup vegetables any vegies available at home I mostly take green peas, cauliflower, carrot etc. 10. coriander leaves, mint leaves (optional ) 11. One table spoon oil 12. Indian spice mix one tsp or Everest biryani masala, I mostly use my own home made spice mix. 13. Two bay leaves. 14. One black cardamom 15. One star anise (optional ) 17. one green chili 18. Salt to taste.

RECEPIE :- Take rice wash properly and keep aside. Cut onion in thin slices, tomato, and vegies in small cubes. Cut coriander, mint leaves and green chili. Now, take a cooker or thick bottom vessel, keep on gas stove, keep the flame medium high, add oil let it heat a bit then add onion in it, fry until golden brown, add ginger-garlic paste now add green chili coriander, mint leaves , bay leaves, fry a bit then add tomatoes and vegetables fry for few seconds ,add now spice mix turmeric powder, lastly add rice and lentils mix and stir a bit after this add water double the amount of rice if you want it bit less dense or loose in consistency add water according to your preference. After adding water add salt as per taste. let cook until done.

Have khichdi with ghee and dahi ( yogurt ) rayta.
