INTRODUCTION

Fenugreek ( Methi leaves ) leaves are not only flavorful but also offer various health benefits. They are rich in vitamins, minerals, and antioxidants. To lead a wholesome life fenugreek leaves can be a superb choice. Lets see two ways to cook Methi.

METHI SABJI TYPE ONE – Ingredients 1. four cups of Methi leaves 2. Two medium sized onions 3. Four green chilies 4. Eight cloves of garlic 5. Red (masoor dal ) or yellow lentils (moong dal ) 1/2 cup 6. Oil two table spoon 7. Turmeric 1/4 tsp 8 salt to taste

Method – Cut onions in thin slices (cubes ). Cut green chillies keep aside. Peel garlic cloves cut in thin slices. Wash Methi leaves properly, Wash lentils. Now heat oil in a cauldron ( kadhai) , add onions, fry until golden brown. Add chilies, garlic and turmeric soute a bit , then add lentils again fry a bit. Now add Methi leaves mix well with all the ingredients, add salt to taste sprinkle little bit of water, keep the lid and let cook until done.

METHI SABJI TYPE TWO – CHICKEN METHI – ingredients – 1. Four cups of Methi 2. 250 gm boneless chicken 3. Ginger – garlic paste 4. two onions 5. 1/4 cup grated dry coconut 6. 2 tsp sesame seeds 7. 1 table spoon chicken spice (masala ) use Everest chicken masala or Garam masala. 8. 1/2 tsp chilli powder 9. 5,6 black peppers 10 . 1/4 tsp coriander powder,1/2 tsp cumin powder 11. 1/4 cup fresh coriander leaves 12. 1 tsp Indian kanda lasun chutney ( oinon- garlic chutney) 13. One tomato 14. Two tablespoon oil 15. salt to taste .

METHOD – Cut onion, coriander leaves, tomato take a fry pan pour one tsp oil in pan heat it on low flame. Add onions fry till light brown, now add grated coconut fry till light brown, add to it sesame seeds fry till brown. after fring add these ingredients into a mixer grinder add to them coriander leaves , black peppers, grind to make a corse paste. Now heat oil in a cauldron (kadhai ) and add the the paste to oil from mixer. Fry the paste in oil for 2 mins ,then add kanda -lasun chutney, chilly powder, haldi (turmeric powder ), chicken masala, add ginger-garlic paste and tomato again fry everything for 2-3 minutes. Add chicken, mix well, now add one cup water and salt to taste. keep the lid and let chicken cook on mediun high flame until done. check water while cooking chicken add some if needed. keep consistency like a thick gravy. After gravy is done reduce flame to slim, add methi leaves little by little and mix well. check salt if needed, let cook till five minutes, and Methi chicken is ready. You can reduce the quantity of ingredients according to your choice also u can add one or two green chllies if u don’t want chilli powder. This chicken Methi sabji tastes too good instead of boneless chicken you can add chicken with bones or mince chicken too.
