Ingredients :

1 ) Two tea spoons of olive oil 2) One small onion diced 3) 2 celery stalks, diced 4 ) 1/2 zucchini, diced 5) 1 carrot diced 6) 1/2 cup white beans 7) 1/2 cup mix vegetables of your choice I use potatoes , cauliflower, cabbage, some corns . These vegetables should be partially cooked. 8) 1 cup tomato pure 9) 1 tablespoon Tabasco sauce 10) 1/2 cup white beans { cannellini beans } 11 ) few basil leaves . 12) vegetable broth 2 cups 13) 1/2 cup pasta { small shells } 13 ) 1/2 teaspoon oregano 14 ) 1/4 cup parmesan cheese 15) 1 tsp corn flour 16 ) salt 17) 1/4 tsp sugar

Method :

Heat olive oil in a medium large thick bottom pot. Put onion, celery, zucchini, carrot, few basil leaves, fry until golden brown. Add white beans , mix vegetables, pasta tomato pure, tabasco sauce .So, now add vegetable stalk let cook until the beans are softened and cooked properly. Add salt to taste and 1/4 tsp sugar and oregano . Now make corn flour slurry and add into the soup to give some thickness. And your tasty .healthy soup is ready ! Garnish with basil leaves , black pepper powder and parmesan cheese.

Gazpacho the chilled summer Spanish soup 😋

As the summer heat soars, beat it with a cold Spanish “Gazpacho “soup. It’s the iconic soup of Spain, simple and flavorful made with ripe red tomatoes ,cucumber and herbs.

Ingredients :

1) 4 fresh red tomatoes 2) 1 cucumber diced 3)1/2 red pepper diced 4) 1/2 green pepper diced 5) 1 small onion diced 6) 1-2 garlic minced 7) 10 basil leaves 8) 1/2 tsp vinegar 9) extra virgin olive oil 2 tsp 10 ) few black peppers 11) 2 whole wheat breads 12 ) salt to taste 13) 1/4 tsp sugar

Method :

Add everything into a food processor . Pour one cup of chilled water and process until smooth paste ,Now remove from processor into a bowl . Add cold water again according to your preference of consistence. Check salt and sugar if needed add some as per your taste . Sugar is optional I like to add some to balance the taste so I use it. Now keep the bowl in fridge for two hours to chill .After two hours you can have this refreshing healthy soup . If you want to have it immediately add some ice cubes and have it cold.

Classic American Black Bean Soup

Black bean soup is easy to prepare, It is delicious made with protein-packed black beans, aromatic vegetables, and warm spices. So, craving a comforting and flavorful meal? Look no further than black bean soup!


1) 1 cup dried black beans ,rinsed and soaked over night 2) 4 cups vegetable or chicken broth 3) 1 table spoon of olive oil 4) 1 medium sized onion 5) 3 cloves garlic ,minced 6) 1 carrot diced 7) 2 stalks of celery ,diced 8) 1/2 tsp cumin powder 9) 1/2 tsp dried oregano 10 ) 2 bay leaves 11) salt and black pepper to taste 12) 1 tablespoon of lime juice 13 ) Toppings – can use any as per your choice. I mostly use Avocado slices and sour cream.
