“TASTY RAJGIRA : TRIPLE TREAT”

rAJGIRA (AMARANTH)-

Rajgira is a highly nutritious grain. Rich in protein, vitamins and minerals. In India different cuisines of Rajgira are used while fasting to keep up the body energy. To day Rajgira has become most popular in health conscious people as millets and is consumed daily or weekly three to four times. Therefore this highly nutritious grain is used to lead a wholesome healthy life. So lets see three delicious recipes of Rajgira (amaranth)

paratha 😋

INCREDIENTS –

  1. One cup Rajgira flour
  2. 2 boiled and mashed medium sized potatoes
  3. 1/2tsp jeera
  4. 1inch ginger
  5. 2 green chilies sliced
  6. 1/2 cut thinly cut coriander
  7. salt to taste
  8. oil as per need

METHOD –

Mix Rajgira flour and boiled potatoes. Add chilies, thinly cut ginger, jeera, coriander and salt to taste. set it aside for few minutes. Now make round and flat patties (parathas ) with hand or with the help of rolling pin. Roast the parathas in a frying pan. Brush some oil on each side while roasting (optional). Your heathy and tasty parathas are ready. Have it with curd and ground nut chutney.

laddu – Is a very simple recipe take 200 grams regular gaggery. Melt it in a thick bottom pan on medium high flame. As soon as it melts add around 1/4 kg puffed rajgira mix properly and make laddus while it is still warm. While mixing u can add some peanuts and one table spoon ghee it’s on your choice. I would not suggest ghee.

UpmaIngredients -1) 1/2 cup Rajgira cleaned and boiled for 15 minutes . 2) 1 small Onion thinly sliced 3) 1/2 tsp jeera 4) 1/4 tsp mustard seeds 5) 1/2 tsp ginger paste 6) 2 green chilies 7) 2 tablespoon oil 8) salt to taste 9) any vegies of your choice 10) peanuts or any nuts

Method – Keep fry pan on medium high flame . Heat oil, add jeera , mustard seeds to it. Now add onions, green chilies, fry for two minutes. Add vegies mix well now add Rajgira. Add salt to taste. You can also add 1/2 tsp sugar (optional). Mix everything well and let cook until done. Garnish with few coriander leaves. Serve with lemon, tomato slices,
